3 Great Healthy Summer Recipes
Fiery pork tenderloin
2 teaspoons brown sugar
2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon + 1 tablespoon (if needed) extra-virgin olive oil
1/4 teaspoon kosher salt
1 1/2 pounds pork tenderloin, with fat trimmed
Preheat the grill to medium heat. In a small bowl, mix brown sugar and spices together, then add 1 teaspoon olive oil to form a paste. Rub the paste over the pork. If food tends to stick to your grill rack, soak a paper towel with 1 tablespoon of olive oil and, using tongs, wipe the grill rack. Grill the tenderloin over medium heat, covered, for 20 to 25 minutes. Remove from grill and let the meat sit for 5 minutes. Carve the pork into 1/2-inch-thick slices.
Makes 6 servings
Per serving: 167 calories; 6 g fat (2 g sat); 63 mg cholesterol; 4 g carbohydrate; 23 g protein; 1 g fiber; 213 mg sodium; 382 mg potassium
